Inspector notes: Observed warewashing machine not dispensing sanitizer solution. Machine had warning message displayed despite PIC's recent replacement & fill of sanitizer. CA: A chlorine sanitizer used for mechanical operation shall have a concentration between 50-99ppm COS: PIC placed all dishes recently washed into quat sanitizer (400ppm) in 3-compartment sink, put a "do not use" sign on washer and informed all employees to not use dishwasher until repaired.
