May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

COS: PIC stated milk was placed in unit this morning less than 4 hours prior. PIC instructed employee to place milk on ice bath to rapidly cool. No TCS items to be held in cooler until internal temperature is verified to be at 41F or below.
