CA: Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. COS: PIC voluntarily date labeled the TCS food items with "prepared day" labels.

Inspector notes: Observed the top inner lids of the prep top cooler covered with taped and glued foil. The foil and tape were partially coming off. The inner side of the foil was collecting water condensation and food debris. CA: Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. Also, equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. COS: PIC voluntarily removed the foil and tape off the lids. PIC will provide photo proofs once the glue is removed by 7/2/2025

CA: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: Routinely inspecting incoming shipments of food and supplies; Routinely inspecting the premises for evidence of pests; Using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections, and Eliminating harborage conditions. Discussed with PIC to clean the kitchen to eliminate possible harborage conditions. PIC will provide pest control invoice via email.
