Inspector notes: Observed multiple TCS food items (raw shell egg, sliced cheese, and cut tomato) cooling inside of a disrepaired prep top cooler. Advised PIC on proper cooling methods. COS: PIC placed raw shell eggs, sliced cheese, and cut tomatos in the walk-in cooler.

Inspector notes: Observed prep top cooler near the grill prep area in disrepair with an ambient temperature of 50 degrees F. Advised PIC ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Advised PIC to have unit serviced.

COS: PIC removed cardboard form flooring.
