Inspector notes: CA: There must be a person in charge on the premises of the food service establishment at all times. The person in charge shall ensure compliance with the food code. Upon arrival, cashier stated that there was no management present. COS: Manager arrived 10 after inspection started.

Inspector notes: CA: After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food and may not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry. Observed food employee take a metal pan from dish machine and use as a food container for potato french fries. COS: PIC discarded potato french fries and moved metal pan back to the dish area.
