Inspector notes: Observed the can opener with old food debris. The head cook stated that he used it yesterday (12/8). Advised him to clean the can opener after each use to avoid a build up of old food debris. Observed clean dishes stores underneath the prep table in the middle of the prep area with debris inside of them. Equipment food-contact surfaces and utensils shall be clean to sight and touch.

Inspector notes: Observed the water pressure very low on the handwashing sink in the prep area (cold water), hot water low pressure in the employee's restroom in the kitchen, and both men and women's restroom with low water pressure (hot water). Water under pressure shall be provided to all fixtures, equipment, and nonfood equipment that are required to use water except that water supplied as specified under subsection (1)(k)1 and 2 to a temporary food service operation or in response to a temporary interruption of a water supply need not be under pressure.

Inspector notes: Observed the bottom of the prep unit with water nesting. Make sure to clean the water regularly. Please schedule for a technician to service the unit and check to see if a drain line is clogged. Observed the handles on the handwashing sink on the hot line in need of repair. Handles are leaking and water is being caught in a bucket. The handle on the vegetable prep sink is not in good repair either.

Inspector notes: Observed the ceiling tile missing and some damaged, and a hole on the wall in the employee's restroom in the kitchen, ceiling tile damaged and a hole in the ceiling in the men's restroom, and a hole in the ceiling in the kitchen on the hot line. All physical facilities shall be maintained in good repair. Ceiling tile in the restrooms should be smooth, easily cleanable, and nonabsorbent. All holes should be sealed and painted.
