Inspector notes: Observed multiple potentially hazardous TCS foods cold holding at a temperature greater than 41 degrees Fahrenheit. (butter - 46 F, cream cheese - 44 F, whole milk - 44 F, oat milk - 43) Corrective Action: Discussed proper cold holding temperatures with PIC. All items out of temperature and found to be greater than 4 hours old were discarded. The cooler was placed out of service and must be serviced by a licensed technician. Documentation of repairs must be provided. Please call the Health Department to have the cooler rechecked prior to use.

(smashed avocado - 46 F, sliced tomatoes - 51 F) Corrective Action: Discussed proper cold-holding temperatures with PIC. These items were found to be less than 2 hours old and were brought to the chest freezer to rapidly cool back down to 41 F before placing in prep top for use on sandwiches. Discussed storing or cooling tomatoes and avocado in reach-in cooler prior to slicing/cutting.
