Observed facility also utilizing TPHC for the sushi on the tray in front food service. Inspector notes: Observed scoop with handle stored on top of ice in drink machine ice bin in the front food section. Observed scoop with handle stored directly on top of ice in the bulk-producing ice machine in main kitchen. Observed bag of sugar with a plastic bowl stored on directly top of the sugar. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: 1.Except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container. Person in charge properly placed scoops with handles above the top of the ice. PIC removed bowl from sugar bag.
