Inspector notes: Observed multiple food contact surfaces of microwaves at the cookline of the main kitchen stored as clean with staining and residue. Also observed food contact surface of the interior of the ice bin lid located at the wait station of the main kitchen stored as clean with black residue. Advised PIC that equipment food-contact surfaces and utensils shall be cleaned at any time during the operation where contamination may occur. Advised PIC to increase the cleaning frequency of the ice bin and interior of microwave.
