Inspector notes: Observed facility without a Key Drop Delivery Contract. Employees are visibly observing and verifying delivered foods as they are received to determine that they are from approved sources and are placed into appropriate storage locations, as required by this Chapter, such that they are received and maintained at the required temperatures, protected from contamination, unadulterated, and accurately presented, by routinely monitoring the employees’ observations, maintaining receiving/corrective action records for deliveries during non-operating hours and periodically evaluating foods upon their receipt as specified within DPH Rule 511-6-1-.04(3)(m). Advised PIC to obtain Key Drop Delivery Contract and to maintain contract on file.

Inspector notes: Observed food contact surfaces of multiple pizza pans with excessive carbon buildup and debris. Advised PIC that all food contact surfaces shall be cleaned to sight and touch. Advised PIC to wash, rinse, and sanitize after each use and to discard pizza pans that have excessive carbon buildup.

Inspector notes: Observed nonfood contact surfaces of multiple shelving racks in the walk-in cooler in the main kitchen stored as clean with debris and accumulation of residue. Also observed excessive food debris at the bottom of the reach in freezer in the main kitchen. Advised PIC nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Advised PIC to thoroughly clean shelving racks in the walk-in cooler and the interior of the reach-in freezer.
