Inspector notes: Observed lobster being thawed and prepared in the rinse section of the three compartment sink. CA: (t) Food Preparation. During preparation, unpackaged food shall be protected from environmental sources of contamination. COS: The rinse compartment of the three compartment sink was sanitized. Discussed with PIC that meats can be prepared only in the sanitizer compartment of the three compartment sink if there is no meat sink available. Only meats can be washed in the sanitizer compartment of the three compartment sink, and the sanitizer compartment must be washed and sanitized after each different type of meat and before using it to sanitizer equipment or utensils after washing meat in it.

Inspector notes: Observed fish and meat cooler near grill cooling meats prepared around 10:30 am that morning with an ambient temperature above 41F. CA: 1. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. COS: The meats were taken from the cooler and placed in the freezer to cool properly. The meat cooler was placed out of commission.
