Inspector notes: Observed several pans of pasta salad cooling wrapped with plastic and lid during cooling process in walk in cooler at 64 degrees F less than 2 hours. CA: Cooling method used and observed should be adequate for rapidly cooling TCS foods. COS: pic unwrapped pasta salads cooling and placed pans into walk in freezer to rapidly cool down.

Inspector notes: Observed live roaches and roach activity in dish washing area. CA: Facility should eliminate harboring conditions to control and minimize bug presence. COS: No Corrective on site. pic will place work order for leaking pipes around wall in dish washing area and have all openings protected. Health Dept. will re-check 3/3/26 Leaky pipes repaired and openings repaired some. Pest Control serviced area. Openings should be repaired with cleanable surfaces-no foam and cut outs for pipes should have fastener around pipe to secure and seal opening in concrete
