CA: Cold TCS foods shall be maintained at 41F or below. COS: CFSM removed TCS foods to be rapidly cooled in walk in cooler top 41F or below. TCS foods were prepped 2 hours prior. CFSM will have containers placed in freezer prior to prepping to help TCS foods on bar maintain proper cold hold temperatures.
