Inspector notes: Observed several condiments stored in unlabeled squeeze bottles. Corrective action - PIC advised to label all food removed from original containers. Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food.

PIC reported that attempts at cleaning shelving under prep tables were unsuccessful and he would purchase new prep tables with smooth, cleanable surfaces on shelving. Nonfood-contact Surfaces. Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Corrective action - PIC advised to perform detailed cleaning on floors, walls, and ceilings throughout the establishment. Maintenance and Operation. (a) Good Repair. All physical facilities shall be maintained in good repair. (b) Cleaning, Frequency and Restrictions. 1. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
