Inspector notes: Observed ranch and cole slaw cold-holding above 41F in prep-top cooler. Observed shrimp cold-holding at 61F in reach-in cooler (see temperature log). COS: PIC stated items in prep-top cooler were placed in unit less than 4 hours prior. PIC discarded shrimp in reach-in cooler and ensured items in prep-top cooler were placed on an ice bath to rapidly cool.
