Inspector notes: Observed potentially hazardous TCS foods cold holding at greater than 41 degrees Fahrenheit in prep top cooler. Observed multiple deli meats (Turkey 45 F, Roast Beef 44 F, Tuna 45 F) cold holding above 41 degrees Fahrenheit in prep top cooler. All foods were observed to be filled above the fill line in their respective pans. CA: Discussed proper cold holding temperatures and procedures with PIC. Prep top cooler had been opened less than 1 hour prior. PIC moved all foods cold holding above 41 degrees Fahrenheit to walk in cooler to be properly cooled. Multiple temperatures were taken to verify proper functionality of prep top cooler.
