Inspector notes: Bulk Ham 44 degrees, hard boiled Eggs 49, Bulk Pot roast 49 hanging thermometer 44-46 degrees-- stored in the Stand up cold hold unit inside the kitchen temperature was 44-49F. All TCS foods must be cold held at 41F or below. Food Products discarded and or moved to a new cooler and cooled back down.

Inspector notes: Rubber mat rolled up standing next to secondary shelve where pans are stacked for cooking and next to table mount can opener. Rubber mat needs to be stored else where due to possible cross contamination when picking up and rolling etc on to cooking pans and touching can opener.

Inspector notes: Observed raw beef sitting above a fully cooked ham in the reach in cold hold unit. Once EHS showed CFSM on site she immediately removed the tray with the raw beef and set it on the bottom shelf below the ready to eat ham.
