Observed the reach-in unit used for sauce storage to have heavy accumulation of rust on racks. Observed walk-in cooler racks to have an accumulation of rust. CA: PIC advised racks will be replaced. RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Inspector notes: Observed ambient temperature inside downstairs refrigerator exceeding 41F. Unit had canned crab meat and unopened containers of dressings (blue cheease, caesar, italian, etc.) COS,CA: PIC discarded the crab meat and moved the unopened containers. Coolers are residential units, if the are unable to function and hold temperature properly, they shall be replaced will commercial grade units.

Inspector notes: Obserevd downstairs dish washer not dispensing enough chlorine sanitizer (less than 10ppm.) Sanitizer bottle was full and observed solution moving through the tubing. CA: PIC called chemical service represenative to service the dish washer. Chlorine dish washers shall santize between 50ppm-100pm.
