Inspector notes: Management is not enforcing active managerial protocols to ensure food safety as evidenced by the violations observed (hot water not reaching minimum required temperatures, malfunctioning cold holding unit with TCS food held within, build up inside of freezer/cooler). RCA: Facility is to re-evaluate managerial protocol in oversight of facility operations by implementing an active managerial control plan.

Inspector notes: Observed hot water at handwashing sink in kitchen area not reaching 85F (83F). Observed hot water in employee restroom not reaching 85F (63F). RCA: A handwashing sink shall be equipped to provide tempered water at a temperature of at least 85ºF (29.4 ºC) through a mixing valve or combination faucet.

Inspector notes: Observed front reach-in cooler with food temperatures of 53F (greek yogurt)and ambient temperature of 55F. COS CA: PIC discarded yogurt and placed new yogurt on an ice bath. Facility is to have unit repaired and ensure that any foods requiring time temperature control are kept at 41F or below.
