Inspector notes: Observed multiple wet wiping cloths in kitchen area stored on prep surface. Observed wet wiping cloths stored in quat sanitizer bucket at front service area below 200ppm. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: PIC replaced sanitizer solution in the bucket and placed wet wiping cloths in a sanitizer solution.
