Inspector notes: Observed chicken wings holding in the raw meat preparation sink with no overhead protection. Observed fired oysters, fried okra, and other frozen items stored in the reach-in freezer with protective coverings. Observed burgers in the reach-in cooler on the cookline with protective covering. Observed whiting in the reach-in cooler for the fish fry station without protective coverings. CA: PIC had covers or lids placed on all items. PIC educated that during pauses in food preparation, lids of coverings shall be place over food items.
