Inspector notes: Observed guacamole prepped at 9am (EHS temped at 2:30) cold holding at 57F. Observed raw ground bison at 46F. Observed to raw beef steaks at 50F and 47F. C/A: cold time/temperature control for safety food shall be maintained at 41°F or below COS: items discarded and replaced with items from the walk-in cooler observed at 41F or below NOTE: Technician arrived around 3:20pm. CFSM states that the raw meat prep top needed the filter changed; CFSM stated the technician said that the unit was maintaining temperature but not filtering enough air to maintain food temperature.
