6-1A - proper cold holding temperatures
Inspector notes: Observed potentially hazardous, TCS foods being cold held at greater than 41 degrees F in main walk-in cooler during inspection. Raw Chicken- 43 degrees, Chicken and Rice- 44 degrees, Cheese Sauce- 43 degrees. Paneer Cheese- 44 degrees, Raw Lamb- 43 degrees, Cooked Chicken- 43 degrees, and Yogurt Mix- 43 degrees. Corrective Action: CFSM was notified. All TCS foods were found to be prepped or held in walk-in cooler since the previous evening. Due to food being held greater than 4 hours, all TCS foods out of temperature were discarded. Management was given 24 hours to have walk-in cooler properly repaired. Licensed professional will be contacted for immediate repairs to ensure it is operating at 41 degrees or below. Documentation is required. Health Department must be contacted to recheck...

Inspector notes: Observed several bulk food items such as sugar and various other seasonings in containers with no name labels. Corrective Action: CFSM was notified. Employees were assigned to label all seasonings and other bulk food items with their common name for easy identification.
