Inspector notes: Observed cooked wings and cooked mushrooms cooling at room temperature for over an hour and temperature was 83 F. CA: Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the approved methods depending on the type of food being cooled. COS: PIC put wings in cooler to rapidly cool to 70 F before two hours. Mushrooms had been out longer and were discarded.
