Cooling to 70 deg F within two hours not met. COS: Food was discarded. Staff was instructed on cooling time and temperature along with helpful cooling methods. CA: Cooling TCS foods must be cooled to 70 deg F in two hours, then to 41 deg F or less. The entire process taking no longer than 6 hours.
