Inspector notes: Observed walk in cooler ambient at 44F, oysters at 42F, scallops at 43F, and lettuce at 43F. Make sure cold holding foods are temping at 41F or under. Advised PIC to maintenance WIC to lower the temp. Suggested that metal containers will retain the cold temperature better than plastic containers if they so choose. Will be back within a few days to make sure WIC is temping at 41F or under.
