Inspector notes: Observed multiple food items stored on the ground (sauce on sheet pan stored directly on the ground, onions in a box stored on the ground in the walk in, and raw chicken being prepped on a sheet pan on top of garbage can). CA: PIC immediately moved items off the ground and stored them on a storage shelf. PIC immediately moved pan of chicken that was being prepped on prep top table. Food shall be protected from contamination by storing the food: in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least 6 inches (15 cm) above the floor.
