Inspector notes: Observed moldlike substances and small dead insects inside of food containers inside of the prep top cooler. Kitchen manager advised that the prep top cooler has not yet been used for food service. Kitchen manager was advised that equipment and dishes that are not in use must still be cleaned and stored in a designated area that prevents contamination. Manager was also advised to wash, rinse, and sanitize all food containers in the prep top cooler.

Inspector notes: Observed a pan of scrambled eggs previously cooked today being improperly cooled. Scrambled eggs were completely covered while still being cooled. Manager was advised of the proper cooling methods as well as the proper cooling procedures. Manager corrected on site.

Inspector notes: Observed food debris on the prep table bottom shelf where clean pots, pans, and cutting boards are stored. Please have all kitchen shelves cleaned from food debris to prevent contamination of clean equipment that is being stored on them. Observed old debris inside of the steam table.

Inspector notes: Observed small dead ants throughout the main kitchen. Dead ants were observed on the floors of the kitchen, above the hand sink and 3 compartment sink, on prep tables, in the mop room, dry storage room, and inside of food containers in the prep top unit. Small mosquitoes were also observed on the floor behind the milk cooler on the serving line. Manager was advised to remove all dead bugs from the facility.
