Inspector notes: Observed TCS food (cut lettuce) being cooled in a large container. After 3 hours of cooling lettuce was at 56F. Advised PIC to cool in smaller containers with loosely fitting lid. Also check tap water temperature when washing TCS foods. Advise to use ice in the wash and or spinning step when preparing cut lettuce in the warm weather months. COS- ice placed on lettuce in W/I cooler.
