Inspector notes: Observed beer batter and egg batter stored uncovered and not in active use at the meat/seafood preparation area of the main kitchen. Observed multiple food items (including banana peppers, celery, cauliflower, etc.) stored without overhead protection, lids, or other adequate covering. COS/CA: Person in Charge (PIC) was instructed to properly cover all food items. PIC corrected the violation by covering the foods. Food shall be kept covered when not in use.

Observed the walk-in refrigeration unit to have heavy rust accumulation and dust buildup on fan guards. RCA: Nonfood-contact surfaces of equipment shall be kept free of accumulation of dust, dirt, food residue, rust, and other debris.
