Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety (TCS) food shall be maintained at 41°F. COS by discarding items that were not salvageable and moving salvageable food to a different unit. TCS foods may not be stored in unit until minimum cold holding temperature can be maintained.
