Inspector notes: Observed fried soft-shell crab placed on countertop to cool. PIC stated crab had been fried less than an hour ago with intent to place into reach-in cooler. CA: Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using an approved cooling method. COS: PIC had employee move fried soft-shell crab to walk in cooler to rapidly cool.
