COS - PIC had all employees that lacked an agreement and were present sign a reporting agreement. Advised PIC to have all food handlers sign an employee health reporting agreement and be able to show during a food service inspection.

Inspector notes: Dish machine reached only 137.1 F. Not providing a sanitizing rinse. COS - PIC set up 3 compartment sink sanitizing solution 50 ppm Chlorine. Advised PIC to manually sanitize dishes until dish machine is fixed.

Inspector notes: Observed dirty eye goggles with grease and food residue stored in a drawer under grill with clean cooking utensils. PIC explained they use the goggles to clean the vent hood, but that is not where they normally store them. COS - PIC removed goggles and pulled entire pan of utensils for wash, rinse, sanitize. Advise PIC that utensils must be clean to sight & touch and to avoid contamination of clean utensils.
