Inspector notes: Observed multiple food items taken from the breakfast buffet line (sausage patties, sausage links, Kielbasa, hashbrown casserole, and corned beef hash) and put into the walk-in cooler to be reused for another food service. COS CA: PIC discarded all food and was reminded once food is put out on a buffet line it cannot be returned to the kitchen to cool down and be used for reheating. RCA: Food that is contaminated by food employees, consumers, or other persons through contact with their hands, bodily discharges, such as nasal or oral discharges, or other means shall be discarded.
