Inspector notes: Observed that the facility was manually washing dishes, however, the concentration of the sanitizer was less than the required concentration; it was near 0 PPM. COS. New sanitizer basin solution made. CA: When manually or mechanically warewashing, the sanitizer shall be at the correct concentration.

Inspector notes: Observed that the facility had, and were using, wet wiping cloths in sanitizer that was greater than 500 PPM; strip turned a vibrant blue color and was unreadable on the provided scales. COS. New buckets made. CA: Chemicals shall be used according to their conditions of use, including following the manufacturers instructions.
