Inspector notes: Observed prepared container of ready-to-eat potentially hazardous food (rice) in the reach-in cooler that does not bear a consume by date/label. Food may not be served. COS: Discarded.

Inspector notes: Observed improper cooling methods for Time/Temperature Control for Safety (TCS) foods. Rice was tightly covered during the cooling process, which does not allow for rapid heat dissipation. Cooling methods being used were not adequate to cool TCS foods quickly enough to meet required time/temperature parameters. CA: Cooling must be accomplished using approved methods such as placing food in shallow pans, separating into smaller portions, using rapid cooling equipment, stirring in an ice bath, using containers that facilitate heat transfer, adding ice as an ingredient, or other effective methods.
