Inspector notes: Observed cooked eggs sitting out at room temperature unmonitored with an internal temperature range of 85F-110F. Per PIC, the cooked eggs have been sitting at room temperature for less than 2 hours prior to the inspection, but then the establishment got busy and could not put the eggs away. Explained to PIC, that when cooking eggs that the establishment can not leave the eggs out and should put away cooked eggs to cool properly. The cooked eggs were moved to the reach-in cooler for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means

Inspector notes: Observed stir spoons stored in water at 75-80F. PIC removed the spoons from the water and properly stored the spoons at time. Discussed proper storage methods for utensils between uses at the time of inspection. Utensils in-use must be held in water above 135'F, in running water, or dry and washed/rinsed/sanitized every 4 hours

Inspector notes: Observed spray nozzle attached to hose on mop sink faucet. The faucet at the mop sink has an AVB, which has been under pressure (the water on the faucet was left on). Discussed with PIC about having the AVB looked at by a plumber since it was under pressure to prevent failure. Instructed PIC to remove spray nozzle at time and to ensure that nozzle is removed every time in between uses
