Inspector notes: Observed exposed rafters due to missing ceiling tiles in the area between the pizza oven and prep tables in the main kitchen. Per manager, a leak was repaired and the tiles were expected to be replaced shortly after. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Advised PIC to temporarily cover with construction plastic, if needed, to help prevent physical contamination of food and food prep areas until permanent repairs are made
