Informed PIC that these are food contact surfaces and need to be washed, rinsed, and sanitized frequently enough to preclude the accumulation of organic matter and residues. Informed PIC that this item needs to be time stamped with the beginning and end time. PIC properly time stamped the garlic in oil at time of inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection
