Inspector notes: Observed sloppy joe, chorizo, hollandaise sauce with an internal temperature of 100-122*f on stove top and hot well. PIC states stove top was turned off 30 minutes prior to inspection and re-heated food to 165*f at time of inspection. Discussed proper hot holding temperatures and cooling requirements
