Inspector notes: Observed TCS broth cooling in tightly covered deep pots greater than 4" at the time of inspection in stand up cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per PIC, broth was cooked two hours prior to the time of inspection. PIC was instructed to use an ice bath or place broth in containers 4" or less at the time of inspection
