Inspector notes: Observed dishes being sanitized in the three-compartment sink, with the quat sanitizer measuring below 150 PPM. Alerted the manager who added more quat tablets to the solution. After dissolving the tablets and stirring the quat solution measured (200 PPM). Discussed the importance of checking hand-dosed sanitizers each time they are made to make sure they reach the appropriate concentration

Staff stated they pulled these foods from the walk-in 1 hour prior to temperature measurement, and they intend to keep them on a 4-hour time control. They did not have a time control policy or a method of documenting discard times. Alerted the manager and worked on a time control policy. Discard times were documented on stickers affixed to the containers
