Inspector notes: Observed containers of consume and cooked birria meat in walk-in cooler with date marks of 11/2. Per manager, items were made on 11/2 and frozen. Items were removed from freezer and placed in walk-in cooler on 11/15. 11/20 will be day 7 and items will be discarded by the end of the business day today, if not sold. Discussed date marking procedures when freezing cooked food items. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection
