Inspector notes: Observed flash fried potatoes and spanakopita (spinach, cheese) on a unmonitored speed rack in the back of the kitchen with an internal temperature range of 60F-65F. Per PIC, the potatoes and spanakopita have been cooling for less than 2 hours prior to inspection. PIC moved the TCS food items to the walk-in for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means
