Inspector notes: bucket of vegetable soup in wic is date marked yesterday, 2/17, and temps between 43F and 48F throughout. PIC stated it was cooled yesterday using an ice bath and frequent stirring. he spfirther stated that it was brought out of wic approx 3 hours ago to portion out of for the soup in the hot pot and that it was left out longer than it should have been. cos by pic placing soup uncovered in WIF and stirring frequently. pic set a timer to temp check soup within the hour to verify it had reached 41F.
