Inspector notes: Bakery dishmachine is not sanitizing properly during inspection today. The max temperature reached was 154F after running three times. The unit uses high temperature to sanitize. Maintenance was called during inspection. Until repairs are made, the large dishmachine will be used (which is functional) OR the dishes will be sanitized in the three compartment sink using quaternary ammonia. A follow up will be conducted to determine compliance.
