Inspector notes: There is cooling chicken in a metal container with a lid in the walk in cooler. The pic stated the chicken was done cooking at 12pm and set on a counter to rest. The prep cook pulled the chicken apart at about 12:30pm. He then placed them in the walk in cooler to cool the remaining time. At 2pm the internal temperature was at 78f. The pic moved the containers to the walk in freezer to rapidly cool.
