Inspector notes: 1200-23-01-.04(6)(a)1. 3 compartment sink set up improperly; missing rinse step in between wash and sanitize. Observation of chemical concentration showed no residual sanitizer in either sink bin. Upon investigation, sanitizer solution bottle was empty that supplies the 3-comp sink. COS: PIC refilled sanitizer bottle and hoses for detergent and sanitizer were rearranged to ensure proper warewashing order. Due to length of supply hoses, signs for warewashing must be rearranged to the opposite direction to prevent confusion of employees.
