Kitchen staff is taking the sausage out of the freezer and placing on the counter to thaw before reheating in convection oven. Discussed with PIC that the sausage needs to be thawed under refrigeration or in the sink under cool running water. Additionally, the sausage can be thawed in the cooking process -- in the microwave or convection oven.
