Inspector notes: (Out) observed pan of cooked chicken in water (80.7°) stored on cooktop temp out of limits. When questioned person in charge stated that chicken is held and reheated upon order. Corrective Action-educated on proper par-cooking practices and that chicken has to be kept at 41° or less or 135° or above for par-cooking. Chicken reheated as required. Item will be checked at time of follow-up.

Inspector notes: (Out) observed two unlabeled clear spray bottles containing unknown purple liquid stored in kitchen and at server station. Corrective Action-educated on proper chemical identification and person in charge labeled products as required. Item will be checked at follow-up. 2nd time in a row for violation, risk control plan to come.
Hot and cold water available; adequate pressure
Inspector notes: No hot water available or extremely slow to heat in bathrooms at time of inspection. Sinks in kitchen work as required.

Can opener not in use has a dirty/rusted blade.
